Ingredients: 1 packet of dry yeast (10g), 350ml milk, 303 grams of bread flour, 235 grams of cake flour, 40 grams of sugar, 13 grams of salt and 75 grams of melted unsalted butter

Dissolve the yeast in the cold milk. Yes its cold milk! You want that dough to rise slowly!

Mix in all of the dry ingredients

In a stand mixer with a hook attachment add the milk and yeast to the dry ingredients. Mix for aproximately 5 minutes. You can also mix by hand.


The dough should look smoth and elastic after mixing.

Add the melted butter to the dough and let the dough knead for at least 8 minutes on the mixer. You could also incorporate the butter by hand and knead for about 12 minutes

The dough should look soft and a bit sticky. If its too sticky add a bit more flour. Dont add too much flour otherwise the dough will become dry!

Let the dough rise until it triples in volume in a warm place. Dont froget to cover the bowl with a dry kitchen towel

In a flowered surface place the risen dough

Roll it up like a cylinder about 50 cm long ( 18 inches)

Divide the dough into 10 equal pieces

Open each piece with your hand and add your filling. I am using cheese and ham but you can use any filling you want. Sausages is also great. You can skip this step and dont add any filling

Roll the dough and pinch of the ends. Place the breads in a baking sheet lined with greased parchment. Let it rest for 1 hour. Let it bake for 25 minutes in a preheat oven of 200 celcius ( 400 F).
